    Cooking

    I really liked the old cooking thread so thought why not bring it back. Right now my favourite recipe is this one fokr Chicken Noodle Soup from scratch. It is perfect now winter is here and seriously tastes amazing all three times I've made up a big batch:

    It's winter over there? We just started summer lol.

    Yeah, technically still late Autum but cold enough that there is a flu going around.

    Nice, I would love to have a proper smoker to do smoked meats, would love to try brisket or smoking ribs. I have a pretty decent gas BBQ that does an awesome steak, chicken, sausages or burgers but it doesn't really do low and slow.

    Try just turning on one side of the burners and doing an indirect cook. Basically, get the burners going, and then put your meats on the other side where there is no heat and closing the lid. This should allow you to approximate the low and slow method. It's what I've done with charcoal grills in the past, and it works pretty well.

    I need to get back into cooking a bit more. Been busier lately and it's resulted in more takeaway food and all the negative stuff that goes along with that.

    Any interesting recipes out there, I'm in the mood to try some new stuff so post 'em up.

    I'd suggest try roasting something, some chicken, a piece of beef or lamb. Amazingly tasty, not to hard and good sese of acomplishment.

    If you would like something more technical I'd suggest going to the Bingeing with Babish youtube chanel. It is easily my favourite cooking chanel and he is pretty easy to follow along to as well.

    The Mrs doesn't eat meat so I don't tend to cook any more than just small bits for myself. A shame because I used to do a mean chicken.

    Speaking of which she's away right now so I'm making a hot chicken stew kinda deal. Bunch of chicken thighs, some cayenne and two different types of chilli pepper, tomatoes, mushroom, onion and lentils for the nutrition, throw it all in a pot with some stock and let it cook until the thighs start to fall apart. Going to taste good.

    I don't really know where else to put this so I'll stick it in here.

    There's a pub near me that has gone all-Vegan. And y'know, some of it is actually pretty good - good enough that as a meat eater I'm still happy to eat it. I tell you what, this stuff has come on leaps and bounds in the last ten years, because I remember as a kid anything that was calling itself 'Vegetarian' was borderline inedible.

    I lump vegan food with foods that contain mayo and/or sour cream... as long as you donít tell me those disgusting ingredients arenít in what I eat, then weíre all good. If I know the ingredients, Iím out. Surprise me with something thatís delicious (while not bragging whatís in it... or not in it) and Iíll devour it.

    I actually had some vegan chocolate not too long ago courtesy of a colleague. It tasted pretty good! No way I would ever even turn vegetarian though, let alone vegan. Can't beat a good medium-rare steak, or roast lamb dinner!

    Got a really great 5-ingredient cook book recently. It solves all my problems - quick, easy, (relatively) cheap and turns out tasty fresh food! I hate cooking, so it's actually really useful on cutting down the time I have to spend feeding myself.

    Apparently not.

    I cooked Christmas Dinner for the first time this year and it turned out OK, so regardless, I feel like a boss for this afternoon.

    Here, we don't have really true food traditions for Christmas! We've realised it actually this year, it's kind of weird I think! We usually have a little lunch, on Christmas Eve, since I was a kid. Most years, Mom cooks, while we kids watch movies. One year, at the cottage, we sent her to bed and *tried* organizing everything. Turns out bacon fat dripping in the oven is flamable.. LOL. We didn't burn the cottage down, so all is good. We laughed a lot, so did she when the fire alarm woke her up.
    Since a few years, I'm pretty much alone on Christmas Eve with Mom, but we still do eat a bit in the evening, this year was bacon wrapped sausages and bacon wrapped scallops, and cold shrimps with cocktail sauce. It's really REALLY basic, but it's our thing! Mom usually drinks a glass of wine and I get a Bloody Ceasar (we don't drink much at all!).

    We have another celebration planned with friends and family on Friday. We'll be like 30 this year, somehow everyone was available! So we cook food for 2 weeks before the event! We prepare cocktail food, some coconut-panko shrimps, many canapťs with salmon or prosciutto, a family recipe of sweet sausages, again bacon-wrapped sausages, and many more! We also make a variety of cookies, fudge, donuts, cupcakes. I usually search for inspiration on Pinterest. I found most of my favorite recipes on there. You can litteraly search for anything on there, we built so many menus on that!

    I hope your dinner was well appreciated. Cooking for people I like is always a great feeling !

    Quite like the sound of the cocktail food. I quite like picking at small bits and eating with my fingers so it's right up my alley.

    Yes, food went down well. The one advantage of a small gathering if that you can tailor it to who is there, so you just have to not ruin it and it seems to do the trick.

    This is my first time making Broccoli Cheddar Soup from scratch. It came out freaking awesome, better than Panera imo. Here is how I did it...




    Okay if you want to try making this yourself, keep in mind you gotta stir almost constantly until it looks like this and you lower the temp to simmer. Lots of cheese, will burn and stick to the bottom if you don't!

    Recipe: 1 cup carrot sticks (finely cut/shredded)
    1 entire stock of celery (about 5 pieces make up a stock) cut very small.
    2-3 cups broccoli florets (depending on how much Broccoli you want.)
    1/4 Cup Flour (Or Corn Starch)
    4-6 tablespoons of butter
    1 full can of Chicken Broth
    1/2 an Onion
    1 pkg shredded Cheddar
    1 1/2- 2 cups of milk, or cream.

    (Can add in any other cheese you like as well, and season as you want. I added a couple spoonfuls of cream cheese, Black Pepper, Garlic, & Salt.)

    - Melt butter and add it and Flour/Corn Starch to pot. Whisk until blended on med low heat (like 2-3 mins).

    -Add Onions, Carrots, Celery, and seasonings. Stir in, then add cheese. After blended add in Broccoli Florets. Stir for another 5 or so mins.

    - Add in Milk/Cream slowly as you stir to thin it a bit. As you do this lower the temp to low/simmer, so you dont curdle/overheat the milk/cream.

    Once you've added in all the milk/cream and it is well blended, cook on simmer and cover for maybe 10 mins.

    Stir it a couple more times, letting vegetables get tender.

    Total cook time maybe 30 mins (prep time is longer, shredding the carrot is a pain in the ass!)
